
Storing Peas
Fresh peas will be sweetest if you cook them as soon as possible after purchase. If you must store them, they will keep in the refrigerator in a plastic bag for 2 to 3 days.
Storing Snow Peas and Sugar-Snap Peas
These peas are fairly perishable and will decrease in flavor if stored for more than a few days. Keep them in a plastic bag in the refrigerator. Use snow peas within a couple of days of purchase, Sugar-snap peas should last for up to 5 days after purchase, both will be better if eaten sooner.
Storing String Beans, Haricots Verts, Romano Beans, and Yellow Wax Beans
Refrigerate these beans unwashed and tightly wrapped in a plastic bag. They should keep for up to 5 days.
Storing Cranberry and Lima Beans
Store the beans unwashed and in their pods in a perforated plastic bag in the refrigerator. They should keep for up to 5 days.
Storing Fava Beans
Fava beans should keep for up to 3 days. Spread them out in a wide dish and store in the refrigerator.
Storing Chinese Long Beans
These beans have a tendency to become limp and develop rusty patches if not used within a few days. Store in a plastic bag in the least cool part of the refrigerator and use within 4 days.
